Mexican Squash Casserole
6    Medium Yellow Squash
1    Small Onion
1    Cup Cubed (1/2 inch) Velveeta Cheese
 1/2 Small Can Green Chilies
 1/2 Cup Cracker Crumbs
Boil Squash & Onion until tender, stir and drain well.  Mix in Cheese & Green Chilies.  Pour into buttered baking dish and cover with cracker crumbs.
